A loop tip is an open frame rather than a solid face, and that changes what happens to the tissue inside it. A solid jaw compresses everything between its surfaces; a loop contacts only around its rim, so tissue bulges into the opening and is held by that rim instead of being flattened. For bowel and other structures where crush injury shows up days later as a leak, holding without compressing is the whole requirement.
Setting the loops at right angles to the line of closure is what stops the slippage. Jaws that close in the same plane the tissue wants to slide in let it squeeze out sideways; turning the loops across that axis means the tissue would have to move through the frame rather than out of it. The stability pin keeps the two arms in register so the loops meet squarely every time — misaligned loops grip on one edge and lose the advantage entirely.
