Cartilage is wet, dense and slightly elastic, and on a smooth board it skates away from the blade at exactly the moment a cut needs to be straight. The dimpled surface of this board grips the underside of the graft so it stays put under the knife — which is the difference between a clean full-thickness slice and a cut that wanders and wastes a piece of harvested cartilage that cannot be replaced.
Teflon is used rather than metal because it is softer than the blade. A steel surface blunts the knife on every pass and throws metal particles into the field; the polymer takes the cut instead and spares the edge. At 85 × 55 × 10 mm the board holds several grafts at once or one full-length dorsal piece, and the 10 mm thickness keeps it from flexing or sliding on the back table during carving.
