The pattern grips by having many small points bite lightly; once those points round off, the jaws stop biting and start pinching — and a pinch on delicate tissue is exactly the crush injury the multi-tooth design exists to avoid. Shallow fine teeth in plain steel round off faster than coarse ones, which is why this is the pattern most worth specifying in carbide.
The serrated platform behind the teeth adds a second working surface for flat material — a suture, a needle, a fold of gauze — gripped by friction rather than by points.
